
There's this restaurant in Columbus called Marcella's that has the most delicious Apple salad ever: mixed greens, tart apples, red grapes, walnuts, gorgonzola cheese, and topped with a sherry wine vinaigrette. I'm a lover of salads in general but restaurant salads scare me - they're so... overloaded with crap. Not to mention the fact that some salads are as bad for you as a burger. But this one was the perfect balance of being fairly light and flavorful.
Of course it's dirt easy so I've been re-creating it at home ever since. This particular salad was made with romaine lettuce, tomatoes, feta, gingergold apple slices, and some broken up plain pita chips and a red wine vinaigrette. Honestly... I just use what I have on hand. Strawberries, grapes, tomatoes, dried cranberries... it all tastes pretty good when you pair it up with some nice crisp, tart apples.
And bonus: gingergold apples don't turn brown like other apples! So if I decide to make this salad up for a lunch for work I can cut the apples up without worrying about them looking gross by noon. :)
