Sunday is normally our grocery shopping day, but I'm putting it off as long as I possibly can this week. We have a LOT of food in our house. Plenty of food to feed us for the week, if not even maybe two weeks if I'm creative. I really want us to use up some of our food that has been sitting on the shelves, so this recipe came as an attempt to throw something together with what we have. Which ended up being perfect because we had pretty much everything on hand!
I used bone-in split chicken breasts for this, rather than my usual boneless/skinless variety, mainly because I purchased them for about $2.00 a package! It was marked down because it was getting close to its sell-by date. :) We just threw them on the grill, since it seemed like a perfect day for such a thing.
In keeping with the 'use what we have' thing, I found a rough recipe for a corn/rice mixture. Basically you cook the rice in chicken broth instead of water, saute up some peppers, onions, and corn, and then mix it all together and serve. Really basic. And really... bland. I even added a diced jalapeno to it, just to try to add some more flavor. But it was... ugh. I'm not really sure what to do to add to it... maybe some fresh cilantro mixed in? Different veggies? A bit of salsa?
The best thing about tonight's dinner was the chicken. The bone-in split chicken breasts cooked far better than our regular boneless/skinless kind. It had really good flavor and was nice and juicy.
