Garden Harvest Veggie Salad

We've had cucumbers out of the garden the last few weeks and our tomatoes are finally starting to turn red! So its a perfect time for a garden harvest veggie salad!

Its nothing 'special' as far as food recipes go. Its dirt easy and requires zero cooking, which is a plus when the kitchen is too hot to cook in... or, you know, like every other day when I don't feel like making dinner (I swear I've been worse than usual this summer).  I make mine with chopped cucumbers and tomatoes, feta cheese, and kalamata olives and then drizzle it with a bit of Italian or Greek dressing depending on what I have on hand. Just mix it up and eat. I'm experimenting a bit with other ingredients every time I make it. I had this for dinner on Monday only I used leftover fresh mozzarella in place of the feta and green peppers because I forgot I had olives. It wasn't bad, but the flavor of the feta and olives really add a lot to it.
