Grilled Herbed Potatoes

Can you believe that I'm actually starting to get a little bit ahead with this cooking/blogging thing?  Today I have grilled potato wedges to share with you!

While aimlessly browsing the produce area of Meijer (and trying to decide whether I really needed to buy a bag of potatoes and if I'd actually even use them if I bought them) I started perusing their little display stand of recipe cards. Sean pointed to one for grilled, herbed potato wedges so I took a look and realized we had everything at home already (minus the potatoes, of course) so I figured I'd give it a try.

They're stupid easy. Stupid easy as in I can't believe I didn't know how easy and delicious these things are for you. You really don't even need a recipe! Just mix a bit of olive oil with some salt, pepper, a pressed/mashed garlic clove (or use the kind in a jar if you have it on hand), and some dried thyme and mix in your wedges and then throw on the grill for a couple minutes on each side until they start looking golden and delicious.

We fixed ours with bone-in split chicken breasts on the grill. I have to admit: this has been one of our better dinners lately.  I'm wondering how they'll do in the oven rather than the grill once winter comes.
